For the Dough

  • ▢ 3 cups (375g) organic flour

  • ▢ 1/2 cup (100g) bubbly and active sourdough starter

  • ▢ 1/2½ cup (125g) soy/almond milk, room temp

  • ▢ 1/2 cup (115g) vegan butter, melted (I use earth balance)

  • ▢ 3 tablespoons (38g) brown sugar or coconut sugar

  • ▢ optional 1 teaspoon (5 mL) pure vanilla extract

For the Filling

  • ▢ 2 tablespoons (30g) vegan butter, melted (I use earth balance)

  • ▢ 3 tablespoon (35g) brown sugar or coconut sugar

  • ▢ 1 tablespoon (15 mL) ground cinnamon

  • ▢ optional pinch of nutmeg

For the Sweet Milk

  • ▢ 1/4 cup unsweetened soy/almond milk

  • ▢ 1 tablespoon (15 mL) maple syrup

  • ▢ splash of vanilla extract

For the Icing

  • ▢ 1 cup (134 g) powdered sugar

  • ▢ 3 tablespoons (43 g) vegan butter or margarine

  • ▢ 1 tablespoon (15 mL) unsweetened soy milk

  • ▢ 1 teaspoon (5 mL) vanilla extract

  • ▢ optional but amazing 1 tsp (5mL) almond extract

Instructions

To Prepare the Dough

  • Add the dough ingredients to a stand mixer with the dough hook. Mix until combined. Knead for about 3-5 minutes or until the dough comes away from the sides of the bowl and forms a soft dough.

  • Cover the bowl with a damp towel. Set it aside in a warm spot for 2-3 hours or until the dough has doubled in size.

To Assemble the Sourdough Rolls

  • Combine the sugar and cinnamon into a small bowl.

  • Transfer the dough onto a floured surface and roll it out into a large rectangular shape.

    Use a pastry brush to spread the melted butter or margarine on the dough, bringing it to the edges of the dough.

  • Spread the cinnamon sugar mixture onto the dough and spread out with your pastry brush or fingers to cover all areas.

  • Starting at one end gently roll the entire rectangle into a cylinder, careful to create an even roll as best you can.

  • Cut the roll in half, and then again into fourths.

  • Place the rolls into a rectangular baking tray, leaving a little space between each roll to allow them to spread. Cover the tray with a wet tea towel and allow them to rise for at least 1 hour before baking.

  • Near the end of the rise, preheat your oven to 350°F. (180°C)

  • Bake the rolls for 18-22 minutes.

  • Halfway through cooking, pour the sweet milk over the cinnamon rolls.

  • The rolls are ready when you can insert a butter knife into one of the middle rolls and it comes out clean.

To Make the Icing

  1. While the buns are baking, whisk together the icing ingredients using your stand mixer with the whisk attachment, or hand whisk.

  2. When the buns are removed from the oven, let cool slightly before drizzling the icing overtop. Enjoy!
